Happy October! Anyone else been feeling like this year just whizzed by? I’m drowning in a sea of assignments and midterms, but I’m still trying to maintain some semblance of a healthy lifestyle. Like I said, I’ll focus on delicious (but modest) desserts for a little while so I don’t buy a pound of fudge for myself every Monday morning. Almonds are so delicious, made more delicious smothered in tempered dark chocolate!
I constantly see bags of chocolate covered almonds at the grocery store that tempt me, but the homemade version is must cheaper, I guarantee it. What are some other things that you love to cover in chocolate?
Brookside makes chocolate covered pomegranate seeds, acai berries, and almonds. I’ve personally tried chocolate covered raisins, almonds, and walnuts. Almonds are always the winner!
Dark Chocolate covered Almonds
- Prep Time: 15

- Yield: 1 1x
- ½ cup dark chocolate chips
- 1 cup toasted almonds
- In a double boiler, let chocolate chips melt. Stir until smooth
- Let the chocolate cool for a few minutes, and then stir in almonds to coat each almond completely
- On a lined baking sheet, place each almond separately and put into the freezer for a minimum of 1 hour
- Remove with a spatula
