Blueberry Buttermilk Pancakes

Fluffy pancakes loaded with blueberries that burst with flavour!




  1. Combine flour, baking powder, cinnamon, and powdered sugar in a large bowl
  2. In a separate bowl, beat an egg until it starts frothing (beat at least 2-3 minutes), add honey, vanilla, buttermilk, and coconut oil
  3. Add the dry ingredients to the wet ingredients gradually and stir with a spatula to combine. Add in frozen blueberries
  4. Heat a small pan or griddle with 1 tablespoon of coconut oil and pour ¼ of batter into the pan and shape with a spatula
  5. Flip pancake when it bubbles on the top, cook through (whole process takes about 2-5 minutes depending on the size of the pancake
  6. Top with some extra blueberries and powdered sugar
